Turkey Stock

"Thanksgiving is over.  What the heck should I do with the turkey carcass?  I can't give it to the dog, she'll choke on the bones!  I can't compost it!  Oh yeah, didn't Mike post a great "Easy Bone Marrow Stock Recipe" a few months ago!  I wonder if I can use the turkey carcass to make turkey stock?"

Why yes you can faithful reader!  Here's a very simple way to utilize your leftovers...

Step 1: Gather leftovers

Step 2:  Chop up Vegetables
Don't be real picky with how you chop up the vegetables.  Some people don't chop them up at all when making stock.

Step 3:  Throw everything in a pot

Put a dash of vinegar into the pot.  This will help break down the bone to release more nutrients.  We had two turkeys on Thanksgiving, so I split the carcasses into three pots.  Fill the pot with water and bring to a low simmer.  Let simmer for at least 4 hours.  The longer you let it simmer the better.  I let mine go for about 8 hours.

Step 4:  Consume

There are multiple ways you can use the stock.  My wife used the stock to make soup.  I like pouring a cup or two on my vegetables.
